Spinach and Coconut Dal

 This was very delicious!  An unusual one, but I think one of my favorite ones I've done so far.

 Thing to try:  replace coriander seed with powdered.  replace fresh spinach with frozen?  replace fresh coconut with toasted flakes?

Cook dal.   1.25 cups toor dal + 3 cups water + 1 tsp salt + 1 tsp turmeric

Make spinach mixture.  1 T ghee, adding 1 T urad dal until golden, 1 tsp cumin seed and 2 tsp coriander seed + 4 red chilies + 1/2 tsp black pepper.  Simmer a bit.

Add 50g fresh coconut (about 1/3 cup??), 0.5 cups boiling water and spinach until wilted.

Blitz to make a puree.

Combine.  Combine both mixtures.

Tadka.  1 tsp ghee, 1 tsp mustard seed, 2 more red chilies, pinch asofeteda.
